I don't eat much bread (Celiac and don't want to deal with the carbs due to type 1 diabetes) so I will make these at times - don't eat them often. I like the taste and although the texture isn't like the real deal they are something I enjoy as a treat every now and then. I will slice and then freeze and just pop in the toaster for later use. Actually don't have to take any insulin for these unless I have something else with carbs.

Thank you Oly and Arapaho, I’ll definitely make a batch of these, too! I always have Greek yogurts in the fridge. i use the plain in place of sour cream and the vanilla in my morning smoothies.

Lynn, on that last site if you scroll down further she has another gluten free bagel recipe using almond flour, eggs eggs, mozarella mozzarella, cream cheese and baking powder. They look similar to the coconut flour ones but IMO may have a better rise bc of the baking powder.

I'm sure you find a recipe that for you.

At a gourmet bakery, they offer lox, cream cheese on a thin round cracker that they slice up like a pie.

I've since started getting low cal crackers to do the same idea. I would live to find what they use how it stays crispy and can be cut without crumbling.

Eld, we do something very similar. We use these crispbread crackers in place of bagels sometimes. Spreading them first with soft cream cheese, and then capers, onions, lox, etc. These crispbreads, that I think are Norwegian in origin, stay nicely crisp throughout. I‘ll post a pic of them in a moment.
